Cassava in Mojo Sauce

Ingredients

  1. 1 kg of peeled cassava (yuca)
  2. 2 liters of water with a little salt
  3. 2 medium white onions
  4. 2 red sweet peppers
  5. 1 head of garlic
  6. ½ cup of apple cider vinegar
  7. 1 teaspoon of sugar
  8. 2 tablespoons of olive oil
  9. Salt and pepper to taste
  10. Cilantro to taste

Preparation

  1. Peel the cassava and cut it into chunks.
  2. Boil in salted water until soft (about 30–40 minutes).
  3. While it cooks, chop onions, red peppers, and garlic.
  4. In a pan, heat olive oil and sauté garlic, then onions and peppers.
  5. Add vinegar, sugar, salt, and pepper. Let it simmer to create the mojo sauce.
  6. Drain the cassava and remove the fibrous core.
  7. Place cassava on a plate and pour the mojo sauce on top.
  8. Garnish with cilantro and serve warm.

Ingredients

  2. Mash with butter and seasoning.
  3. Add fresh herbs to taste.

Preparation

Mash the cooked cassava with butter and seasoning until smooth. Top with your favorite herbs and serve warm.
